The tone is cool and procedural, practically to a fault. Lalo Schifrin's theme is justifiably famous, all nervous percussion and building brass, and it sets expectations the show mostly meets. Critics of the era appreciated the craftsmanship, and audiences responded accordingly through seven seasons. By modern standards some episodes feel repetitive, the formula can grow rigid, and the Cold War political backdrop sometimes gives the morality an uncomfortable certainty. But the best episodes are genuinely tense precisely because the show commits fully to its own logic.
What separates the original series from most of what followed in the spy genre is its faith in ingenuity over firepower. The IMF wins by being cleverer than everyone else in the room, and the show trusts its audience to keep up. That has aged better than most things from 1966 network television.

Mission: Impossible ran for seven seasons on CBS, which by any measure is a long and successful television life. By the early 1970s, the show had simply run its natural course. The format, built around elaborate cons and disguises executed by a rotating team of specialists, was inherently repetitive, and after 171 episodes the writers were working hard to find fresh variations on a structure that had become very familiar to audiences.
The ratings had softened considerably in the later seasons. The show had been a genuine hit in the late 1960s, but network television was changing around it. CBS was in the middle of a broader programming overhaul in the early 1970s, clearing out shows associated with an older or rural audience, and while Mission: Impossible skewed differently from something like Green Acres, it too was seen as part of an aging schedule. The network was actively reshaping its identity, and long-running action dramas were not the priority they had once been.
There was also the matter of Peter Graves and the ensemble around him. The cast had already gone through significant changes over the years, most notably the departure of Peter Graves's predecessor Martin Landau and Barbara Bain after the third season. By 1973, the show had lost some of the chemistry and novelty that made it exciting in the first place. Seven seasons was a reasonable point to stop, and CBS and the producers appear to have agreed that the run had reached its end.
